Egg Yolk Candy of St Teresa (yemas de Santa Teresa)
These Spanish sweets from Ávila de los Caballeros are really interesting! After trying one at work, I was intrigued and decided to check out how they're made.. I found this cooking video (Spanish, dubbed into English).. I guess, knowing the ingredients, it tastes exactly as you would expect! Really sweet egg yolk flavour, slightly vanilla-y, with a soft but slightly crunchy outside, with a centre that's runny! They're a strange texture, but surprisingly tasty! Who would have thought you could make a candy out of just egg yolk, sugar, and lemon rind?!
